Sidra Acebal – Asturias, Spain – 700 mL
The Acebal family has been producing cider in Asturias for four generations, dating back to 1890. Luis Acebal maintains the production tradition of his great grandfather. Asturias, along with Pais Basco, is Spain’s cider country.
Bone dry and retaining only a very slight carbonation. I find the Asturians to be much more elegant and subtle than their more volatile-y driven Basque counterparts. Big on malic acid, the pair wonderfully with a range of food and cheeses. Native yeast fermented, pressed in wooden apple presses and bottled unfiltered.
